A landlord in Fylde who is a little more than a month into his reign is making sweeping changes to ensure it blossoms again.
Mal Quilliam has arrived in Lytham to take over the the Blossoms pub on Woodlands Road and has almost changed his entire kitchen staff in just five week.
He said: “Business is business as far as I’m concerned, I’m not trying to reinvent the wheel here.
“Like everywhere else I have been, I don’t need to adapt my business style in order for the pub to grow.”
The ex army Sergeant comes with a proven track record and has left a successful pub in Cheshire behind.
“I have split the pub into two areas, one with the restaurant and the other as a sport area with televisions showing live sport and ensuring local dart teams feel welcome with space for the boards.
“We have a set plan on how we want to run it, its a family business, not just somewhere for drinkers to party, its for everyone to come and enjoy.
“I want to encourage drinkers back into the pub, while understanding they need to respect families dining here.”
Mal was in the army before taking on the reigns as a landlord with expeditions all over the world in some of the most dangerous places including Bosnia, Afghanistan and Kosovo.
He said: “I think my time in the army has helped me, in my time as a Sergeant I heard every excuse in the book.
“I like to work with people on a daily basis, I think its the organisation that came with army life that I could not give up.”
In his short time as landlord of the Blossoms, Mal has already seen promising signs for a long and prosperous future at the pub.
“It’s been a fantastic start, we had a great night on Bonfire night.
“The place was packed, we had a barbecue and mulled wine for everyone, there was no trouble whatsoever.
“We are also already fully booked up for Christmas,” Mal added.
Mal started running pubs due to the connections he made while serving in the army.
He jumped at the chance to settle down in Fylde after previously working in Lytham.
He said: “I got asked to help out at the Ship and Royal in Lytham about 10 years ago so I already knew the area and how lovely it was, so as soon as this new venture was mentioned I decided I wanted to settle down here.
“My wife is from Amsterdam and we spend lots of time there but it was good enough for her to relocate too here.”
